Andorra's geographical location gave rise to a cuisine of its own in the mountain regions, which over time received and assimilated the influences of French and Catalan cooking. Andorran cooking has always been intricately connected to the area's typical produce, conditioned by the seasons and traditionally characterised by the self-sufficiency of the locals.
You can still perceive the identity of Andorran society in the old, traditional houses found high up in the mountains known as bordes. Historically these were used to store grain and cattle, but nowadays some have been transformed into restaurants. Dining at one of these bordes, you can contemplate their peculiar warm and welcoming architecture and style of decoration, while discovering traditional Andorran cuisine.
